The Root of The Answer

What were they?


Well, I have to admit that it was a trick question. Some people thought they were parsnips due to the colour, but they are in fact
Carrots!
Yes, they are carrots of a variety called Lunar White (aka Belgian White). Hands up who knew that not all carrots are orange? Hmmm, not many of you, is there?

In fact you can get carrots in lots of different shades.

I think the purple is my favourite.

Anyhoo, how's about a quick carrot recipe?

There are lots of different things one can cook with carrots, including cakes, soups, muffins, breads, stews, but I bet you've never heard of this one:

Carrot Marmalade


Ingredients 

1 ½ lb of brown sugar.
4 cups of chopped carrots.
4 medium oranges.
1 large lemon.
Water.

Directions:

Chop the carrots, oranges and the lemon.

Mix with sugar.

Allow to stand overnight.

In the morning, cook until the mixture gels.

Seal while hot.

Give it a go! Try it with the purple ones!
